Kale can be roughly textured and slightly bitter tasting, but massaging it with lemon makes it more savory and easier to chew and digest. For a great side dish, sauté kale and pair it with sausage or roasted nuts to enhance its flavor and protein content. Here's how to make this dish at home:
- Half of a large red onion, sliced
- Coconut oil (or other oil of choice)
- 2 bunches green or red kale
- 1 lemon
- Sausage or roasted nuts, chopped
Wash the kale and tear the leaves into roughly bite-sized pieces. Squeeze the lemon onto the kale and massage the juice into the leaves. Set aside the kale and sauté the onion in the oil. If using sausage, saute it with the onion until the onions are translucent and the meat is fully cooked or heated (if already precooked). Add the kale and cover the pot or pan. Cook for 5-7 minutes, stirring occasionally, until the kale has wilted or reduced in size. If using roasted nuts, add the nuts to the finished dish. This makes 3-5 servings.
