½ tbsp coconut oil
1 cup oats
2 cups coconut milk
2 tbsp peanut butter
2 tbsp Chia seeds
1 tbsp cinnamon
½ tsp nutmeg (optional)
½ tsp cardamom (optional)
2 tbsp maple syrup, agave, or other sweetener of choice
Chop and saute the apple in the coconut oil until soft and lightly browned. Transfer to a container and add the rest of the ingredients. Mix the ingredients well and transfer to three containers. Top with crushed nuts (we recommend roasted walnuts), coconut flakes, and more sauteed apple. In the morning, add more coconut milk and sweetener as desired. Makes three servings.
